Mediterranean Vegetable Salad


Here’s a recipe for those who, like me, want to eat more vegetables but don’t always find them appealing. This side dish is super easy to make – yay! – and can go with many different meals. Plus, I think it’s quite tasty. So go on, give it a try!


About 4 cups vegetables, chopped
(I used grape tomatoes, broccoli/carrot slaw, cucumber, bell pepper and red onion)
1/4 cup crumbled feta
1 Tbsp olive oil
1 Tbsp balsamic vinegar
1 tsp lemon juice
1/2 Tbsp dried basil
1/2 Tbsp dried oregano
Salt & pepper to taste


Umm…combine and serve. Easy!
